Leek & Potato Soup

Ingredients:
3 large leeks, washed and sliced
1 1/2 Tbsp butter or olive oil
4 pounds potatoes
4c water
4c vegetable broth (or more water and/or milk)
3 Tbsp chopped fresh dill
3 Tbsp chopped fresh parsley
1 lemon or 2 limes, juiced
salt to taste

Directions:
Wash the dice the potatoes. Place potatoes with the 4c of water in a large pot, cover them, bring to a boil, lower the heat, and simmer until completely tender. Melt the butter in a skillet and cook the leeks over medium heat, stirring often, until they are limp. Add the leeks and all the other ingredients in with the potatoes. Cook everything together for about 10 minutes and salt to taste. 

Tips: I usually mash the potatoes with a potato masher right in the pot of soup to make it creamier. This soup takes potato soup to a new flavor level. It is also delicious with carrots and/or greens in it. Leeks are a very nutritious (great for your gut health!), mild and flavorful onion/garlic-like plant. They are also great sautéed with potatoes or vegetables. We used a combination of our 5 potato varieties in the soup.

Tomato & Cucumber Salad

Dice up fresh tomatoes and cucumbers. Also great with chopped red onions and kalamata olives. Squeeze lime or lemon juice on veggies, add some flaxseed oil (which is a high omega-3 oil), sprinkle with chopped fresh dill, salt to taste.

Oven Dinner

Sage Potatoes

No recipe needed. Just dice up potatoes and fresh sage leaves, toss with some extra virgin olive oil, and place on a baking sheet. Bake in the oven at 400 degrees until crispy on the edges, stirring once midway.

Roasted Veggies

No recipe needed. Simply cut up all your favorite veggies (we do any combo of beets, kohlrabi, green beans, rutabaga, turnips, carrots, onions, leeks, zucchini, summer squash) and toss with a little extra virgin olive oil and fresh herbs (oregano, parsley, sage, rosemary), and optional garlic powder and sea salt. Place on a baking sheet and cook in the oven, stirring midway, at 375-400 degrees until done.

Baked Tofu

Ingredients:
14oz refrigerated extra-firm sprouted organic tofu
5 Tbsp nutritional yeast flakes
5 Tbsp low-sodium Tamari or soy sauce
1 Tbsp extra virgin olive oil

Directions:
Drain tofu block well and then cut into 1/4 inch thick slices. Dip slices in shallow bowl of Tamari sauce and then "bread" in nutritional yeast flakes. Place slices on a lightly oiled baking dish. Bake at 400 degrees, flipping over midway, until lightly browned.

​Delicious as a side, leftover in sandwiches, or leftover cut up into cubes on a salad.
